How to make Mediterranean Style Cod At Home in 10 Easy Steps

If you’re tired of the same-old dinner dishes, take your tastebuds on a tour of the Mediterranean Sea with my favorite Mediterranean inspired salted cod recipe. This keto-friendly technique is super easy to make and has a great kick with a spicy aftertaste, thanks to a little bit of Frank’s Red Hot. 

Besides being delicious, cod is rich in protein, vitamins, and phosphorus, which is essential in a healthy diet.  Cod is rich in Omega-3 fatty acids and it’s a heart healthy food with an incredible amount of protein.

Ingredients 

  • Salted Cod (4 pieces)

  • 794g Marzino tomatoes 

  • 1 bottle Artichoke 

  • 1 cup of different types of olives

  • 1 Lemon 

  • Onion (1 large size)

  • 1 ½ tablespoon Garlic 

  • 8 – 10 small potatoes

  • Frank’s RedHot Cayenne Pepper Sauce (to taste)

  • 4-5 tablespoons Olive oil 

  • Salt (to taste)

  • Pepper (to taste)

  • Oregano

  • Thyme 

  • Parsley 

Instructions

  1. Take a non-stick pan and put some olive oil in it. Add garlic and salt to the pan and fry over high heat for 30 seconds. 

  2. Put in onions and let them just start to get translucent before you put the tomatoes in. 

  3. Add tomatoes, lemon juice, thyme, Oregano, and Frank’s RedHot, and cover the pan with a lid. Bring it to boil over medium heat for 5-6 minutes. 

  4. Remove the lid and mix well before adding other ingredients. 

  5. Add olives, steamed potatoes (already fork tender), artichoke, and mix together well. 

  6. Take a skillet and put the cod in it. Now transfer the pan mixture on top. 

  7. Cover the skillet and bring it to simmer for 3-5 minutes on high heat. 

  8. When it’s starting to simmer, set the heat to low and let it cook for 15 minutes. 

  9. After 15 minutes, turn off the heat and remove the lid. Your Mediterranean Style Cod is ready. 

  10. Top with fresh parsley and serve with cauliflower rice.

Tips

  • If you don’t know how to salt cod, click here to watch the recipe. 

  • If you are following a keto diet, you can skip the potatoes. 

  • Save time by cutting whole tomatoes in the can. 

  • If you don’t have cod, you can use any white fish like sea bass, halibut, snapper, and haddock.

Why is my cod chewy or dry?

This usually means the cod is overcooked! Pay close attention to the cooking time and the heat of your stove to be sure your cod comes out perfect every time.
