How To Make Fresh Beets at Home
If you enjoy beets as much as I do, you’re going to love this recipe for preparing fresh beets at home. Today, I’m excited to share with you one of my favorite side dishes and how you can make an easy beet salad that will go great with any meal you serve.
Beets are one of my favorites—for good reason. They are packed chock full of healthy vitamins and minerals like vitamin C, iron, phosphorus, potassium, and iodine. They’re also rich in nitrates, which helps keep your blood pumping properly and helps with lower blood pressure.
Today I’m excited to break down how to make this dish in a few easy steps. If you’ve never tried beets before, this is one of my favorite ways to make this vegetable at home—it’s delicious, nutritious, and so easy to make!
Ingredients
Fresh beets
Goat cheese
Lemon juice
White vinegar
Olive oil
Salt
Pepper
Instructions
If you’re beets aren’t cut, be sure to cut off the ends about 2” above the beet, itself. Then, bring your water to a boil. Add salt, white vinegar, and then add your beets.
Reduce the heat to a slow simmer for 35 minutes.
Next, it’s time to warm up the goat cheese. You can do this in the over by wrapping the goat cheese in aluminium foil, or you can warm it up in the oven or microwave for 45 seconds.
Once your beets are cooked, let them cool for 15-20 minutes.
Peel the skin and slice of the ends. Cut the beet into four or six pieces depending on the size. You might want to do this with gloves or a beet tool, since beet juice does tend to stain skin.
Next, take a bowl and add lemon juice, salt, pepper, and olive oil in it.
Toss the beet pieces in the bowl and mix well. Serve on top of warm goat cheese.
Quick Tip:
Be sure to check on your beets regularly. Because beets can vary in size, the cooking time can vary, too. You’ll want to check on your beets often to be sure they aren’t undercooked or overcooked.
