The Best Sweet Potato Side Dish

If you crave sweet potatoes this time of year, I have to share with you the best sweet potato dish I’ve ever made. While this is a side dish that goes great with dinner entrees, it’s so tasty that I would argue you could even make it as a stand-alone dish!
I’m a big fan of sweet potatoes and this dish has to be my favorite one I’ve ever done with this ingredient. If you love this amazing superfood, keep reading to learn how to make my favorite side dish with sweet potatoes!
Ingredients:
Sweet Potatoes
Pineapple Juice
1 can unsweetened Coconut Cream (found in the Thai section at the grocery store)
All Spice
Cinnamon
Butter
Sukrin Gold Brown Sugar Alternative

Tips
· This dish uses 1 tablespoon of each ingredient for each cup of sweet potato. So, for example, if your version uses 4 cups of sweet potato, you’ll need 4 tablespoons of each ingredient mixed in.
· This dish bakes the sweet potatoes, instead of steaming them. Steaming them can cause the potatoes to get a little more watery, which can change the flavor and texture of the finished dish.
Step One: The first step in this recipe is to cook the sweet potatoes. I like to cook mine in the air fryer, to make it easy, but if you don’t have an air fryer, you can also do this in a convention oven. I recommend poking the potatoes with a fork and then laying down some aluminum foil on your pan since the sweet potatoes tend to “sweat” as they cook. This will keep things as mess-free as possible for easy clean up.
Step Two: Take your potatoes to your air fryer (or oven) and cook for 45 minutes at 350 degrees.
Step Three: Once your potatoes are baked, you can take them out and peel the skin off. Before peeling, let the potatoes sit for about ten minutes to cool so you don’t burn your fingers. When you’re ready to peel, take a knife and score the skin, peeling it away from the potato with your fingers.
Step Four: Once the potatoes are peeled, place your potatoes in a measuring cup and mash them down. In this recipe, I’m using about four cups of sweet potatoes. For each cup of potato, you’ll want to use a 1 tablespoon ratio of the other ingredients.
Step Five: With the sweet potatoes still warm, mix all of the ingredients in a bowl. If you have a kitchen aid, this would be a great step to use a mixer to combine the ingredients. You can also mix together with a whisk if you don’t have a mixer.
